Chocolate Chip EVOO Banana Muffins

Looking for the perfect accompaniment for your cuppa tea on a frosty fall day? Take out some of the guilt with these butter-free, banana-full muffins. Add in the fact that you can whip these up in less than half an hour including baking time… and you are golden.
3 ripe bananas
6 tbsp. of delicate to medium extra virgin olive oil like Bonamini Organic
1/2 cup sugar
1 tsp. salt
1 egg, well beaten
1 tsp. vanilla
1 1/2 cup flour
1 tsp. baking soda
1 tsp. baking powder
1/2 c. dark chocolate chips
Mash bananas, add olive oil, sugar, and salt. Beat until well mixed. Add egg and vanilla, beat again. Sift flour, baking soda, and baking powder over banana mixture. Stir thoroughly. Add dark chocolate chips. Drop into buttered muffin tins.
Bake at 350 degrees for 15-20 minutes.
